Raz-Pepper Glaze for Salmon and Other Fish

  1. ½ cup Raz-Pepper Preserves
  2. Juice of 1 fresh orange
  3. Zest of 1 orange
  4. 1 tsp. fresh garlic, minced
  1. Mix above ingredients until well blended. Meanwhile, place 16 oz. fresh salmon on a large piece of foil.
  2. Sprinkle with course salt and freshly ground pepper.
  3. Pour glaze mixture over fish and wrap tightly with foil.
  4. Place on a medium high grill and cook for 10 to 15 minutes or until fish flakes easily.
  5. Garnish with sliced scallions or ses-ame seeds.
  6. Enjoy over hot cooked rice.
