Warm n’ Fuzzy Whiskey Pete’s Chicken

  1. 8 Chicken drumsticks or other chicken pieces of your choice
  2. 2 Tbs. olive oil
  3. 2 Tbs. butter
  4. 1 medium sweet onion, diced
  5. ¾ c. whiskey
  6. 1 ½ c. “Pepperlane” Warm and Fuzzy Peach Preserves
  7. 3 peaches or nectarines peeled and diced
  8. 3 green onions, thinly sliced
  9. Chopped fresh parsley
  1. Heat olive oil and butter in a large skillet.
  2. Season the chicken pieces with a generous amount of salt and pepper.
  3. Cook until golden brown on all sides, about 5 minutes.
  4. Remove from the skillet and set aside.
  5. Add the onion to the skillet.
  6. Stir and cook until tender and translucent.
  7. Pour in the whiskey taking care if you’re cooking over an open flame.
  8. Cook for 3 minutes or so allowing whiskey to reduce.
  9. Add the preserves into skillet and whisk to combine.
  10. Add the chicken back into the pan… then the peaches.
  11. Cover and place into a 300 degree preheated oven for 1 ½ hours.
  12. The chicken will be tender and juicy.
  13. Serve over hot steamed rice or mashed potatoes.
  14. Sprinkle with green onions and parsley.
